A huge snow storm hit my city today, so I had nothing better to do than to bake up some delicious sweets! I made my favorite microwave cupcake because I was the only one in the house craving cupcakes!
Microwave Chocolate Cupcake
4 TBSP of AP Flour
2 TBSP of unsweetened cocoa powder
4 TBPS of Granulated Sugar
3 TBSP of Vegetable/Canola Oil
3 TBSP of Milk (I used Vanilla Soy Milk)
1 Egg
1/4 tsp of Vanilla Extract
1/8 Baking Powder
1 TBSP of you favorite pudding mix (I used powered Banana Cream Pie.)
Topping: Handful of Semisweet Chocolate Chips + 2 TBSP of Milk
To make this cupcake, simply add all of the ingredients into a bowl and mix until well blended! Lightly oil/butter a microwavable mug and pour the mixture in! Microwave on High for 2:30 to 3:30 (microwaves may vary, so insert a toothpick to see if it is done.) When the cupcake is done, slide it out onto a plate.
For the topping just put the ingredients into a bowl and microwave for 20-30 seconds. Stir the chocolate until smooth and pour over the cupcake! Enjoy!

This sounds super easy. I am always looking for new things to make in the microwave at work.
Pudding mix? I think that sounds like a secret ingredient (because I would never have thought of it). Probably keeps the cupcake nice and moist. I think I will make this in the mug, but keep it there and spoon some vanilla ice cream into the mug while it is still hot. With the topping you suggest, too. Come to think of it…I gotta get back in the kitchen!

Made enough to split and make 2 cupcakes. Maybe I overcooked, but the cake was very tough.
Hm. Be sure to not over mix the batter. That can form too much gluten and make the cake have a bad texture. You might also try shortening the microwave time. All microwaves are different and too long could cause it to become tough. Let me know if you still have problems. (also try thumping the mug on the counter top to release bubbles in the batter.)

I just tried the chocolate sauce and it was great!
I had a leftover Belgian waffle from breakfast this morning and was in the mood for something sweet.
I put the waffle in the toaster oven to make it crispy and warm, added a scoop of vanila ice cream and your chocolate sauce.
It was awsome!

Looks damn tasty. I’ve been trying to leave off using the microwave for all but steaming vegetables, but this looks very much worth it.
Tried it and LOVED it. I am a resident assistant for first year students and this week I am hosting a hall program for them to all make and enjoy this delicious dessert!
