My husband and I have been at home a lot lately because the weather has been so cold and snowy! So, I decided to bake us up some warm chocolate chip cookies to snack on! I modified a recipe I got from a vegetarian cookbook by Raymond. He only had about three dessert recipes in the entire book, but one just happened to be chocolate chip cookies.
Chocolate Chip Cookies
1/2 cup of butter, at room temperature
1 cup of brown sugar or white sugar
1 egg
1 teaspoon of vanilla
1/2 cup unbleached white AP flour, plus 2 tablespoons
1/2 cup of whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon of salt
1 cup of chocolate chips
3/4 cup of walnuts (optional)
Preheat an oven to 375 F.
I made some variations to this recipe I will discuss along the way. There are two ways to prepare these cookies.
1. In a large bowl, cream together the butter and sugar until smooth. Beat in the egg and vanilla until well blended.
2. In a separate bowl, combine the white flour, whole wheat flour (I just used a cup of regular AP flour because I did not have the wheat flour,) baking soda, salt, chocolate chips, and nuts, if desired. ( I added a tablespoon each of cocoa powder and banana cream pie pudding mix.)
3. Stir the dry ingredients into the wet ingredients, mixing well.
4. Drop the batter by teaspoonfuls onto a greased cookie sheet about 2 inches apart. Bake 7 to 10 minutes until the bottoms are slightly browned. Check the oven after 7 minutes to avoid overcooking.
5. Remove cookies with a spatula to a rack or dish to cool.
The other way to go about preparing the dough, is to put all the ingredients into a bowl, and mix them with your hand. I actually did a mix of the two methods because it sounded like fun and my mixer is a little weird at times.
Hopefully I will get a new mixer and maybe some nice plates. I really enjoy taking photographs of all of my delicious creations!
