I was flipping through my vegetarian cookbook when I found a very simple recipe for Asian style marinated tofu. Tofu, however delicious it may be, is not a meal in itself, so I decided to make some fried rice to go with the meal. We had just enough tofu in the refrigerator for two servings! Perfect.
1/2 a block of firm tofu (pressed)
soy sauce( 2 tbsp + some for the fried rice)
4 tsp of sugar
2 cups of cooked brown rice
butter or vegetable oil (depending on what you prefer)
hot sauce if desired
To marinate the tofu, get a sturdy zip lock bag and fill it with 2 tbsp of soy sauce and 4 tsp of sugar. Add the cubed tofu to the mixture and refrigerate. You can refrigerate it over night or wait 30 minutes, but I would recommend over night.
Heat a fry pan with a small amount of oil and cook the tofu until browned.
Heat a medium pan to medium high heat and melt some butter in it. Add the eggs and cook till nearly done. Then add the cooked brown rice and heat throughout. (I like to let it get sort of brown and partially burned for the delicious flavor, but cook it how you like it) Then add the soy sauce to taste and toss in the tofu. Stir for about another minute and then divide the tofu fried rice into two bowls. Add additional soy sauce/hot sauce if desired, and enjoy!
